Recently established at an old bus depot Bills' is the sister operation of the successful produce store-cum-café founded in Lewes. Bill Collison is the Bill in question, responsible for transforming a family greengrocer into a food hall, delicatessen and all-day eaterie. Here, too, the accent is on daytime grazing, with signature buttermilk pancakes, homemade flatbreads and cheesecakes (such as orange and gingerbread) gracing many of the two dozen rustic wooden tables, set up behind the fruit and veg stalls. You can brunch well with a plate of meze, a Sri Lankan lamb curry or a peppered steak sandwich.
